Taco Soup
Cindy
2 pounds ground beef
1 onion, chopped
1/4 teaspoon cayenne pepper, ground
1 teaspoon salt
1 teaspoon ground black pepper
1 15 ounce can pinto beans, drained and rinsed
1 16 ounce can black beans, drained and rinsed
1 15 ounce can white hominy, drained
1 15 ounce can yellow hominy, drained
1 15 ounce can red/kidney beans, drained & rinsed
1 1.25 ounce package taco seasoning
1 1 ounce package ranch dressing mix
1-2 cups water
1 15 ounce can stewed tomatoes
1 15 ounce can tomato sauce

Brown beef with chopped onion, drain off any fat. Add all other ingredients. Bring to a boil. Reduce heat, and simmer for 30 minutes. Top with shredded cheese and sour cream. Serve with chips.

Potato Treet Casserole

7-10 lbs. potatoes, peeled and sliced
1/2 bottle BBQ sauce
1 can Treet or Spam
2 cups white sauce (I use the recipe on the side of the cornstarch box and double it for 2 cups)

Put the sliced potatoes in water and bring to boil, stirring occasionally to prevent sticking on the bottom. Cook to your desired stage of tenderness. While the potatoes are cooking, dice the Spam. Put in a fry pan with the half bottle of BBQ sauce and warm gently.

Grease a large casserole lightly.

Using a small (1-quart?) colander or sieve, (the kind with a long handle) dip about 1/3 of the sliced, cooked potatoes out of the pot they are cooking in. Allow to drain. Put these potatoes in the greased casserole. (This is easier on the wrists than attempting to dump an 8-quart pot into a colander in the sink, and also easier on the potatoes.) “Sprinkle” half of the Spam mixture over these potatoes. Cover with another 1/3 of the potatoes. Another layer of Spam, another layer of potatoes.

Pour the two cups of white sauce over the top of this. Sprinkle with cheddar cheese or paprika if desired. Warm in 350 oven for 20 minutes or so, long enough to make a salad or heat veggies, while the cheese melts. Serves 11 depending on side dishes and appetites!

You can also add onions to this dish. Add to the Spam before you fry it with the BBQ sauce.

Another real easy favorite:

Make a big batch of mashed potatoes according to your favorite recipe. While they potatoes are boiling (you aren’t using those boxed ones, are you??) cut up one Polish sausage in 1/2 inch slices, and fry this in a fry pan. After you make the mashed potatoes, just stir in the sausage. This one is also good with onions; saute them with the sausage.

Good with green beans or something. I would say it is quick and easy, but that would be lying. How long does it take you to peel ten pounds of potatoes???

Brown Rice and Lentils

6 Tbs. margarine
3 small onions (3/4 cup)
3 cloves garlic, crushed
1-1/2 c. dried lentils (12 oz), sorted and rinsed
1-1/2 c. uncooked brown rice
3 cans (10-1/2 oz) condensed chicken broth**
1-1/2 broth can water
3/4 tsp. red pepper sauce
3 med. green bell pepper, coarsely chopped (3 c.)
1-1/2 c. shredded Havarti cheese with herbs
(6 oz.) **(optional) (or any cheese)

1. Melt margarine in 2-quart saucepan over medium heat. Cook onion and garlic in margarine about 3 minutes, stirring occasionally, until onion is tender.

2. Stir in lentils, rice, broth, water and pepper sauce. Heat to boiling; reduce heat to low. Cover and simmer about 50 minutes, adding water if necessary until rice is tender and liquid is absorbed.

3. Stir in bell pepper. Sprinkle with cheese, if desired.

**We just use chicken boullion

Quick and easy dinner

2 boxes of cheddar cheese augraton potatoes
1 jar of salsa
1 lb of hamburger meat

Make potatoes as directed..
brown hamburger meat..I used 2 pounds.. Hubby likes a lot of meat..
add meat and salsa to potatoes and bake for about 1 hour

Salisbury steak

1 egg
1 can ( 10 1/2oz) condensed French onion soup, undiluted, divided
1/2 cup dry bread crumbs
1/2 tsp. salt
pinch of pepper
1 1/2 lbs. ground beef
1 tbsp. all-purpose flour
1/4 cup water
1/2 cup ketchup
1 tsp. Worcestershire sauce
1/2 tsp. prepared mustard
6 cups hot cooked egg noodles
Chopped fresh parsley, optional

In a large bowl, beat egg. Stir in 1/3 cup of soup, bread crumbs salt and pepper. Add beef; mix gently. Shape into six oval patties.

Brown in a skillet over medium heat for 3-4 minutes on each side. Remove and set aside; discard drippings. In the skillet, combine flour and water until smooth; add the ketchup, Worcestershire sauce, mustard and remaining soup; bring to a boil.

Pizza Casserole

2 lbs ground beef
1 onion chopped
2 jars, 28 oz, spaghetti sauce
2 package spiral pasta, cooked, drained
4 cups mozzarella cheese
8 oz sliced pepperoni

In large skillet brown meat and onion. Drain off fat. Stir in spaghetti sauce and pasta. Transfer to two 9×13 baking dishes. Sprinkle with cheese and arrange pepperoni over top. Cover and freeze one casserole. Bake 2nd uncovered at 350 degrees, 25 – 30 minutes.

Chicken Enchiladas

3c. cooked chicken, cut into pieces
Green chili enchilada sauce (3-11 oz. cans)
20 Flour tortillas (fajita size)
10 white corn tortillas (same size as flour tortillas)
3 c. colby cheese, shredded
5 c. Mozzarella cheese, shredded
1 c. Monterey jack cheese, shredded

Preheat oven to 375 degrees. Mix cooked chicken with 2 cans of enchilada sauce. Heat tortillas in 1/4 cup of oil until soft. Fill the tortillas with the filling mix and top with the colby. Roll up the tortillas and place in pan. When the pan is filled up, add the 3d can of sauce and the rest of the cheeses. Bake at 375 degrees for 20 minutes until cheese is melted.

Serves 10-yields 2 pans of 15 enchaladas each.

Can also be made ahead and frozen. One pan feeds the 7 of us and we usually freeze the second pan for company (like when our pastor-with a love for mexican food-comes over

Chicken and Noodles

One whole chicken (boiled, de-boned and cut in pieces)….keep the stock!
two packages of noodles (any kind you like)
salt and pepper (to taste)
three packages or chicken gravy (powdered)
1 Tablespoon sage
Bisquick! (don’t forget the last two…these are the secrets to success)

After you boil your chicken take it out of the water and strip it down. After you have it in bite sized pieces, put it back in the pot and add your gravy packs. Salt and pepper to taste.

Bring it back to a boil and add your noodles and your sage.
Now start mixing your bisquick. Follow the recipe for dumplings, on the box. About a 12 size serving will do. Mix it up and then drop them by spoonfulls into the noodles. Cover with a lid and turn the fire down. Let it simmer for 5 or 10 minutes. (just look and see when they are done……it does not take long at all.) I usually cook them 5 minutes then turn off the burner and let it sit for 5 more minutes covered.

This is Excellent! And it makes a LOT…we usually have left overs and we have 8 of us!

You will notice, that most of my recipes call for the BIG pot!

Lentil Stew

3 bags of dried lentils

one Huge yellow onion (diced)
two pounds of stew meat of your choice (we use hamburger) cooked and shredded.
2 TBSP Real butter

salt/pepper and seasoning salt

Thats it! Simple-Yummy and oh-so-cheap!

Put all the ingredients in a Huge chili pot and bring to a boil. Then let it simmer for 1 1/2 to 2 hours. Make sure to check that there is enough water but not TO MUCH that it ends up soupy. Should be the consistency of split pea soup.

(which is exactly the same recipe with dried peas instead of lentils.) If making Peas soup you can replace the stew meat with ham
if you would like.

Lentils have a more mild flavor then peas. Season to taste while cooking. I like to serve this with Yankee cornbread.

It cost all of maybe $4 to make, and will feed my family of 8 twice. Freezes VERY well.

Try it…it is surprisingly good. And it is very easy to make in the crock pot. The color is a bit on the red side when in the
crock, where as the lentils are sort of a brownish color in the pot. (tastes a lot better than it looks.

King Ranch Chicken Casserole

1 cup onion diced
1 cup green pepper, diced
½ lb sliced fresh mushrooms
¼ cup margarine
1 can cream of soup
1 can cream of chicken soup
1 lb cheddar cheese, shredded
2 cups chicken, cooked and diced
1 can tomatoes with green chilies
1 clove garlic
2 tablespoons chili powder
1 Tablespoon chicken broth
1 package of corn tortillas, torn into quarters

In large saucepan sauté onions, peppers, and mushrooms in margarine. Add soups, tomatoes, chilies, garlic, chili powder and broth. Spray bottom of 9×13 in pan with pam. Line with tortillas. spread half of soup mixture over tortillas. sprinkle half of chicken over soup mixture. Then
half of the cheese. Place another layer of tortillas, then soup mixture, chicken and cheese. Bake @ 350 degrees until bubbly, uncovered.
Enjoy.

We love to put sour cream on top!

Cheap soup

When I first seen it,I didn’t think I would like it much. But times were hard in the money department and so I made it one night. We all just loved it. dh keeps asking for it. I hope you all enjoy it.

2lb ground beef
8 cups cubed peeled potatoes
2 small onion,chopped
6 cans(8oz)tomato sauce
8 cups water
4 tsp salt
2 tsp pepper
1 to 1/2 tsp hot pepper sauce(I like to use just 1 or it gets to hot for the kids)

In a Dutch oven or large kettle, brown ground beef. Drain. Add potatoes,onion, and tomato sauce. Stir in water,salt, pepper and hot pepper sauce; bring to a boil. Reduce heat and simmer for 1 hour or until the potatoes are tender and the soup has thickened.

I like to add carrots,and celery to this recipe. You can add whatever you like.

French Onion Soup

PROTEIN (1 pound or 1 cup cooked)
Chopped beef
Chopped pork or ham
Ground beef or turkey
Chicken
Turkey
Tuna
Salmon
Mackerel
Cooked dry beans
Frankfurters
Kielbasa

VEGETABLES (1.5 to 2 cups canned, cooked or raw)
Carrots
Peas
Corn
Green beans
Lima beans
Broccoli
Spinach
Mixed vegetables
Celery
Green Pepper
Whatever you have around

1/2 to 1 cup cheese (any kind) can be stirred into sauce at the end of the cooking time.

1.) Choose one food from each of the four groups above. Stir together in skillet.

2.) Season to taste with salt, pepper, soy sauce, onion flakes, garlic, or whatever spices you enjoy.

3.) Bring to a boil.

4.) Reduce heat to lowest setting. Cover pan and simmer 30 minutes until pasta or rice is tender. Stir occasionally to prevent rice and pasta from sticking. Stir in cheese, if desired. Serve.

Makes 4 to 6 servings.

Or, to bake in oven: mix all ingredients in casserole dish and cover tightly; bake at 350 F for one hour.

Maryland Crab Bisque

3 tablespoons margarine or butter
4 Tablespoons flour
1 tsp. salt
1/4 tsp. pepper
3 cups milk or 1/2 can of evap. milk with 1 1/2 cup water. (I use milk)
sprig parsley (I just add about a 1/2 to 1 tablespoon of the reg parsley in a jar)
1 cup chicken broth
1 lb of crab meat (claw is fine and much cheaper)
1 chopped Med. onion
1/2 cup light cream

Melt butter in large saucepan: stir in flour, salt and pepper. Add milk and broth gradually, while stirring over low heat until mixture
thickens. Add crab meat, onion and parsley. Cover and simmer 10 minutes over very low heat. Remove from heat and add cream.

The important thing..never let it come to a full boil. It will make the milk funky.

Lentil-rice casserole

This is the recipe in it’s original portion. It makes an 8×8 pan. I doubled it and still didn’t have enough. I would quadruple it next
time, which sounds like it will be soon.

Lentil-rice casserole
3 c. chicken broth, or use water and 1 T. vegetable seasoning
3/4 c. lentils, uncooked
1/2 c. brown rice, uncooked
3/4 c. chopped fresh onion (I used a little onion powder)
1/2 tsp. Sweet basil
1/4 tsp. oregano
1/4 tsp. Thyme
1/4 tsp. Garlic powder

Blend all together in a casserole dish. Bake, covered, for 1 ½ hours at 300°. During the last 20 minutes, you may top with ½ c. grated cheddar cheese.

Stuffed Pepper Soup

1 1/2 pounds ground beef, browned and drained
3 cups diced green peppers
28-oz can diced peeled tomatoes
28-oz can tomato sauce
3/4 cup brown sugar I cut it down to 1/2 too sweet
2 cup cooked rice
seasonings to taste (garlic, seasoned salt, pepper, Italian seasoning)

Mix all ingredients except cooked rice in large pan. Bring to a boil and simmer for 30 minutes or until peppers are softened. Add cooked rice. Tastes just like stuffed peppers!

Noodle casserole

take any kind of noodle, a firmer noodle tastes the best. Boil the noodles and just add any kind of cream soup. I usually add cream of chicken and then another kind. I like mixing the flavors. I don’t dilute them or anything. I then add a whole pack of shredded
cheese. I like to use the mixed Mexican or Pizza cheeses. I use the large pack. Just mix that all together and it is very yummy and sooooo easy. Sometimes I throw in a couple cans of tuna and make it a main dish.I use a large bag of the shredded cheese and
of course drain the noodles. I also use 2-4 boxes of noodles and adjust the soup and cheese accordingly.

Sour Cream Chicken Enchiladas

They are easy and so good!!!!

I usually take a whole chicken and boil it with an onion, celery if I have it, salt, pepper and garlic powder. Basically you can use what ever you have. I have used leg quarters (I used 4 quarters for my family)

Chicken
1 can Cream of Chicken Soup
1 can Chopped Green Chilies (fresh is good if available)
1 large container of sour cream
10 pack of flour tortillas
Shredded cheddar cheese

In a saucepan combine chicken, soup and chiles heat over med. heat under well combined. Once combined remove from heat and add sour cream. Then you fill tort. with chicken mixture sprinkle with a little bit of cheese in each, roll up and place in 9 x 13 pan. I continue to fill tort. and then with remainder of sauce spread over the top of tort. and sprinkle rest of cheese over the top of that. Bake 350 for about 15 min. or until cheese is melted. Great served with refried beans etc…

note: I have used salsa instead of green chiles if I didnt have it.

Use a large pack of cheese 16 oz. and in the saucepan it is the cooked chicken and other items.

Hamburger Chow Mein

My family loves this and it freezes very well!!

1 lb hamburger
1 onion chopped
3 stalks celery chopped
1 can chicken rice soup
1 can cream of soup
Soy Sauce to taste
12 oz crispy mein noodles

Brown Hamburger and onion. Add to crockpot with everything else BUT the crispy mein noodles. Cook on low 4-5 hours in crockpot. Seve over noodles if you wish. The sauce tasted good- and was one of the meals in my mega session- simple-yet different. Will let you know how it holds up in the freezer.

*NOTE* This meal is so simple I have yet to make it for the freezer- Also we don’t have leftovers from it- so that isn’t an option either.

Beef Stroganauff

Brown 1 lb hamburger meat and throw in crock pot. 1 large can of cream of mushroom soup, 1 cup of sour cream, 2 beef bullion cubes,
and 1 large can of milk. 1/2 t garlic powder. Let stew all day. Boil egg white noodles last minute & pour stroganoff over the top.

NOTE: I did it without browning the meat, but it made it much soupier which was ok, but I prefer it the other way.

Crockpot Mac and Cheese

I always double the recipe. except I only put one stick of margarine in. 🙂

1 Small box elbow macaroni
3 c Cheddar cheese, shredded
I can Evaporated milk
1 1/2 c Homogenized milk
3 Eggs 1/2
Stick butter
pepper to taste

Cook Macaroni according to directions on box. Grease crock pot with butter. Mix all ingredients in crockpot, cook on high for 30 minutes then turn on low and cook for 2 hours.

Crock pot Pizza Soup

1-1/4 cups sliced fresh mushrooms
1/2 cup finely chopped onion
1 Tbsp. olive oil
2 cups water
1 can (18 ounces) pizza sauce
1 cup chopped pepperoni
1 cup chopped fresh tomatoes
1/2 cup cooked Italian sausage, out of casing and crumbled
1/4 tsp. Italian seasonings (oregano, parsley, basil)
1/4 cup grated Parmesan cheese
shredded Mozzarella cheese

In large saucepan saute onions and mushrooms in olive oil 2- 3 minutes, or until tender. Add everything except cheese to crockpot. Simmer on LOW 6-8 hours or HIGH 3-4 hours. Before serving add Parmesan cheese and stir in. Garnish with mozzarella. Serve with garlic bread or bread sticks and a big leafy salad.
